TASTING NOTES
Dark garnet red color with orange highlights . spicy scent with notes of red fruits in liquer, raisins and dried roses. It has a warm, full and vigorous taste, soft and round with pronounced sensations of jam. Intense aroma and decided with great finesse . Perfect as meditation wine.

FOOD PAIRING
Venison, roasted meat, stews, cold cuts, braised meats, stracotto, strong and long aged cheeses like Bitto. Perfect by itself.

WINE TYPE

PRODUCER
The Prevostini family have been producing wine on the terraced slopes of Valtellina since the mid-1940s. The grandfather, Mamete, made wine from local grapes for his restaurant customers, taking advantage of crotti, the natural caves found throughout the region and which provide ideal cellar conditions. His grandson, also called Mamete, eventually took over the business and spent an eight-year trial period refining the production before releasing the results in 1995. Despite all that work behind the scenes, the wines are wonderfully unforced. They capture the perfumed, silky-textured character of Nebbiolo with great transparency, and are among the most sophisticated wines we have tasted from the region.

VINEYARD
Selection of the best grapes in the vineyards of the Superiore DOCG Sassella and Grumello areas

VINIFICATION
The grapes are dried until half January and after are carefully selected at the sorting table, not perfectly intact grapes are eliminated. After a gentle de-stemming the grapes, lightly pressed, are stored in stainless steel containers, where the alcoholic fermentation takes place with a temperature of 25°C for 21 days during which the skins stays in contact with the wort in the maceration. After the pressing, the wine, placed in wooden barrels, carries out the malolactic fermentation. Here it remains for a further 20-months period of aging. The process is completed with 10-months refinement of the wine in bottle before the release.

Supercharged, exceedingly young, very interesting combination of the toastiness from the oak and the fruity but savoury raisining of the fruit. Still a lot of life in this, a perfect wine for people who like big fruit driven tannic styles and those who like subtle savoury fresh styles.
