PRODUCER
Tollot-Beaut is the best-known name in Chorey-Lès-Beaune. The domaine is a century old, and was one of the first in Burgundy to introduce estate bottling, in 1921. It remains in the hands of the Tollot-Beaut family, and is currently run by fifth-generation Nathalie Tollot. At twenty-four hectares, this is quite a generously endowed estate, incorporating vineyards in Savigny, Aloxe, Beaune and Corton-Charlemagne in addition to their holdings in Chorey itself.

VINEYARD
Chorey-Lès-Beaune is a small appellation situated on entirely the east side of the RN74, northeast of the city of Beaune. Tollot-Beaut’s vines here were planted in 1956. No fertiliser is used in the vineyard and all the grapes are hand-picked.

WINERY
The grapes were ninty-nine percent destemmed, gently crushed, and fermented in temperature-controlled tanks for about ten to twelve days, with pump-overs in the first few days and pigeage twice a day thereafter. The wine was aged in barrel, with around twenty-five percent new oak.

TASTE
This delightful Chorey-Lès-Beaune combines very bright, exuberant red fruit with a real underpinning of structure and minerality. There is great length here too, yet the wine is already open and accessible. Another success from the appellation’s leading domaine.
