TASTING NOTES
Lusciously rich with a nose of exotic fruits, peaches, pineapple and white flowers. The palate is powerful and smooth, with the same aromas and complexity as the nose. Pure, elegant and very well-balanced.
PRODUCER
Château Jolys is, at thirty-six hectares, the largest private estate in Jurançon, with a long history of excellence in both dry and sweet styles. It was founded in 1936, and bought by Pierre-Yves Latrille in the 1950s. Since 1999 he has shared the running of the estate with his daughter, Marion Latrille-Henry.
VINEYARD
The vineyards are predominantly sandy clay, and lie at an average of 340 metres above sea-level. The fruit is hand harvested in November; Cuvée Jean is the result of three passages through the vineyard to select grapes at optimum maturity, a process that lasts for about two weeks.
WINERY
The grapes were totally destemmed and given a period of skin contact, before the free-run juice was drained off and cold-settled. Alcoholic fermentation took place in stainless steel tanks at 20oC, and the wine then aged for nine months in French oak barrels.
