TASTING NOTES
A sophisticated, vinous Prosecco, with aromas of spring flowers and stone fruit, a delicate citrus quality on the palate, fine bubbles and a clean, dry finish.
Attractive straw-yellow color with green-gold highlights. Aromas of lightly fruity with apple notes with hints of wisteria in bloom and acacia. Flavors of zesty green fruit palate with finely controlled acidity, harmonious finish.

FOOD PAIRING
Excellent both as an aperitif and throughout the meal; ideal on dishes of fish, vegetable and seafood soups, fresh cheeses and meats white.

PRODUCER

Col de’Salici was founded in 1997 as a specialist producer of Prosecco, and remain determinedly upmarket, carefully sourcing grapes from the best slopes of the region, and focusing on fully sparkling wines as opposed to the still and frizzante versions.

VINEYARD
The grapes come from selected hillside vineyards in the Valdobbiadene DOCG, the denomination for superior Prosecco. Soils are marbly with layers of clay. Grapes were harvested by hand in the second half of September.

WINERY
20% of the must had a twelve-hour cold maceration at 6oC; the whole lot was then fermented to dryness at a controlled temperature, followed by a second fermentation in tank. The wine was then chilled and clarified, a dosage of 9.5g/l was added and the finished wine bottled under pressure.

As well as honey on the palate, it brings delicate citrus mixed with ripe plum and apricot, followed by a satisfying dry finish that?s pleasingly complex. We could have finished the whole bottle. This Brut oozes sophistication, both with the understated bottle and joyful Prosecco inside. Even if you are not getting married, we suggest you still try a celebratory case.
