PRODUCER
Col de’Salici was founded in 1997 as a specialist producer of Prosecco, and remains determinedly upmarket, carefully sourcing grapes from the best slopes of the region, and focusing on fully sparkling wines as opposed to the still and frizzante versions.
VINEYARD
The grapes come from selected vineyards in the Piave region, planted on varied, but mostly clay, soils. The grapes were harvested by hand in the second half of September.
WINERY
The grapes were destemmed and lightly crushed, then given 12- 24 hours of maceration below 10oC to achieve the rosé colour. After a brief natural settling, the must was racked and fermentation began, with a maximum temperature of 18oC. Once fermented to dryness, the wine had its second fermentation in tank, before being bottled under pressure.
