Producer
Husband-and-wife team Hamish and Kate Laurie run this boutique winery hidden in the impenetrable hills overlooking Adelaide. Kate trained in Champagne, and the influence is clear – these wines are game-changingly good. Quite simply, they set a new bar for elegance, complexity and balance in New World sparkling wine.
Vineyard
The grapes come from vineyards in the Lenswood area of Adelaide Hills. The vines are twenty-five years old, planted at relatively high density on very steep slopes of clay over broken shale. The fruit was hand-harvested early in the season.
Winery
The crop was whole-bunch pressed, with the pressings kept separate, then fermented at 15oC in stainless steel tanks using Champagne yeast. The base wines went through malolactic before blending, then were bottled for the second fermentation. After some time on the lees, the bottles were riddled and disgorged by hand.
