TASTEING NOTES
A thrilling example of traditional Jura winemaking, this white blend shows intense, savoury aromas of hazelnuts, green almonds, undergrowth and spice. In the mouth it has a freshness that balances out its evolved aromatic character, as well as great length on the salty finish.

PRODUCER

Domaine Rolet, founded in the early 1940s, is Jura’s largest family- owned estate. The second generation – four siblings – now run the show: Bernard and Guy look after the sixty hectares of vines as well as the winemaking, while Pierre and Eliane handle the commercial side. The vines are old, the yields low, and the vinification meticulous, leading to brilliant, precise expressions of Jura’s distinctive wine styles.

VINEYARD
The grapes were harvested by hand from vines aged forty years and over, planted in the commune of Montigny. The Chardonnay is on light red marl, the Savagnin on grey marl.

WINERY
After a slow pressing and settling of the juice, the two varieties were fermented separately in stainless steel tanks. The Chardonnay was then aged for two years in barriques, and two more years in large casks. The Savagnin, meanwhile, was aged for four years in barriques without the usual topping up, allowing a film of yeast to develop on the surface of the wine, adding its own complex flavours while slowing the rate of oxidation.
