Supple, perfumed Bourgogne Rouge with expressive red fruit flavours, some exotic spice, and the silky texture characteristic of this domaine.
PRODUCER
One of the great modern domaines, Perrot-Minot has garnered considerable critical acclaim for its opulent, aromatic wines. The secret is old vines, meticulous viticulture, and minimal intervention. House specialities include Chambolle Combe d’Orveau, a small vineyard adjoining Musigny grand cru, and the rarely seen Mazoyères- Chambertin. Quantities are as small as the scores are high, and most wines sell out rapidly.
VINEYARD
A blend from various communes of the Côte de Nuits, this wine forms an introduction to the Perrot-Minot range.
WINERY
The grapes were hand-sorted and destemmed. The must was given about a week’s maceration at 14oC, then fermented at a maximum of 32oC. The wine was left to clarify for forty-eight hours, then racked to barrel for 12-14 months’ maturation without sulphur, followed by bottling unfined and unfiltered.
