Fiano - Birdwood, Adelaide Hills. Skin ferment Fiano for 220 days in a locally crafted Amphora. With no additions, including zero sulphur. A mind bending and utterly unique Australian Fiano, a funky and wild odyssey not for the faint of heart, but those avid fans of the style will be truly rewarded.

93 Points – Unico Zelo, Jade & Jasper Fiano 2017:  Brendan and Laura Carter’s cellar door is at their Gumeracha distillery in the Adelaide Hills, but the fruit for this superb Fiano comes from ancient, sandy limestone soils on the lauded Ricca Terra Farm in the Riverland, a specialist in alternative varieties. With 24 hours’ skin contact it’s beautifully creamy, nutty and full of tropical and stone fruit characters on a waxy, textural palate that shows great freshness and length. First class. WINE MARKER NOTES
Some of the most coveted examples of modern Fiano still hail from Campania, but they are made in a more unique and ancient style. While we are no strangers to skin-contact (ahem... Esoterico) we do not make a more dogmatic orange wine than Dreamers Creed. Hailing from our Birdwood vineyard, we skin ferment this Fiano in our locally crafted clay pots - traditionally known as Amphora or Qvevri - for 220 days. We make no additions - including bottling with ZERO sulphur - therefore taking nothing away from the style that inspired it. The Result? A mind bending and utterly unique Australian Fiano. The glass screams of walnut and burnt orange ready for your Old Fashioned with a phenolic structure of dusty tannins that ties this thing together. It's a funky and wild odyssey not for the faint of heart, but those avid fans of the style will be truly rewarded. 
Only 936 bottles have been crafted.

Being winemakers, we're two people incredibly passionate about the soil and produce we have in Australia. It's our intent to showcase products to the rest of the world that embrace Australian native ingredients and pay homage to the indigenous custodianship who maintained the land for thousands of years. 

It's this passion that has driven us to start two wine labels, one that protects our farmers and another that protects our future. We've since taken these concepts and with our distillery, applewood - catapulted it into the horticultural realm - studying indigenous produce, it's beneficial effects on our land and the stories it can tell through incredible colours, flavours, and textures.
